Every jar starts the same way: chillies, peppers, salt and fermentation. With our classic Shatta's, once the fermentation is completed and remaining ingredients added, it stops there. For our zero waste trio, the second phase begins. While other producers might discard the brine from their fermentation, we repurpose it. From that brine, we have been able to create a range of secondary Shatta products with new, more familiar formats without losing what makes it Shatta in the first place: the condiment you always reach for to add that bright, fresh heat to your favourite meals.
Today, two of those products - our Shatta Jam and Shatta Hot Sauce - just won 2 Stars for this year's Great Taste Awards.
For our Shatta Jam, it's a second star on top of the star that it won last year. It's validation in our product, and the small incremental improvement steps we have taken to ensure it's best in class on the shelves.
For our Shatta Hot Sauce, it's its first time in front of the judges, so to come back with 2 stars on the first attempt means a lot.
Alongside Shatta, we, like many others, grew up with classic pepper hot sauces always within reach. Usually this was Tabasco, Falcon Sauce, or some variation of a Louisiana style sauce. Mostly it was vinegar with heat. Our Shatta Hot Sauce took a year to perfect. When we developed it, we wanted to take what we liked about that classic pepper-sauce experience and build something with the depth and balance we look for in a jar of Shatta: tang, heat and real depth of flavour.
With this award, it feels like our intentions are both felt and appreciated.
