Somewhere along the way, somebody decided to call one of the best sandwiches ever invented, an arous - which means “bride” in Arabic.
Why? One popular explanation is that when these sandwiches are traditionally rolled and wrapped in white paper, closely resembling the look of a bride in a white wedding gown.
But nobody knows for certain. All we know is that they are amazing.
The Sandwiches That Raised Us
Everyone has their favourite arous.
Some people want the classic: labneh, tomato, cucumber and mint. In Gaza, their version is arguably the simplest: Shatta and bread. Literally just a spoonful of Shatta spread inside, wrapped, to go.
But what makes an arous memorable is usually not the ingredients. It is the context around it.
It is the sandwich your mum made quickly while moving around the kitchen doing six other things. It is the thing eaten standing up quickly before meeting friends. It is wrapped in kitchen roll for the beach, the park, the football pitch, or the long car journey. It is summer food in the truest sense: fast, easy, and made to be eaten anywhere and anytime.
And during a heatwave like right now, that kind of food makes even more sense.
Nobody wants heavy meals right now. Nobody wants to spend hours cooking. You want something sharp, bright, and full of life. Something easy enough to throw together and take outside with you.
